I made a few variations - no meat, celery, or turnips, so I did about 4-6 potatoes, 3 carrots, 1 zucchini (boiled the potatoes & sauteed zuke/carrots) plus the mushrooms. I added a little bit more milk (about 1/2 cup) as my mixture didn't look liquidy enough. Subbed rosemary for oregano. Came out great!
